Hae Bee Hiam Spicy Dried Shrimps


  1. 250g dried shrimps
  2. 100g shallots
  3. 6 garlic cloves
  4. 15 fresh red chilli
  5. 8 dried chilli, soaked in water for about 15-20 mins and drained.
  6. 10 bird’s eye chilli
  7. 2 tbs brown sugar
  8. 1 tsp salt
  9. 4-5 tbsps vegetable oil
  10. Some water


  1. Soak shrimps in water for 15 minutes. Drain and set aside.
  2. Cut and peel garlic, shallots and chillies into smaller pieces. Add some water, allowing to blend better.
  3. Add dried shrimps in slowly and continue blending.
  4. Add sugar and salt. Stir to mix.
  5. Heat oil in wok. Fry until mixture is dry and dark brown.
  6. Cool and store in airtight container.
