- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 3 carrots, peeled and cut into sticks
- 5 celery stalks, sliced into thick sticks
- 1 large brown onion, peeled and quartered
- 7 garlic cloves, peeled
- 2 bunches of parsley
- 5 sprigs thyme
- 12 black peppercorns
- 3 bay leaves
- Wash vegetables and dry.
- Slice cucumbers.
- Put all vegetables together and mix well.
- Mix balsamic vinegar with olive oil and pour over mixed vegetables.
- Shred parmesan cheese on top of salad.
