Vegetable Stock Broth

Ingredients

  1. 2 tbsp unsalted butter
  2. 1 tbsp olive oil
  3. 3 carrots, peeled and cut into sticks
  4. 5 celery stalks, sliced into thick sticks
  5. 1 large brown onion, peeled and quartered
  6. 7 garlic cloves, peeled
  7. 2 bunches of parsley
  8. 5 sprigs thyme
  9. 12 black peppercorns
  10. 3 bay leaves

Method

  1. Wash vegetables and dry.
  2. Slice cucumbers.
  3. Put all vegetables together and mix well. 
  4. Mix balsamic vinegar with olive oil and pour over mixed vegetables.
  5. Shred parmesan cheese on top of salad.
  6. Serve.
