Using mainly vegetables as main source, I occasionally add cheese to beef up the flavour.
This is a very colourful dish, easy to make and healthy. You can opt out of truffle oil or balsamic vinegar if you do not like them. You can also replace the tomatoes on the vine with sliced tomatoes.
IngredientsA box of spinach1 cucumberCherry tomatoes2 tbsp balsamic vinegar2 tbsp extra virgin olive oilPinch of saltParmesan cheese MethodWash vegetables and dry.Slice cucumbers.Put all vegetables together and mix well. Mix balsamic vinegar with olive oil and pour over mixed vegetables.Shred parmesan cheese on top of salad.Serve.
