Ingredients

  1. 100g Dark chocolate, cut or broken into small pieces to facilitate melting
  2. 100g Unsalted butter, cut into small cubes to facilitate melting
  3. 2 Eggs
  4. 50g Caster sugar
  5. 20g Self raising flour
  6. Icing sugar for decoration
  7. Vanilla ice cream for side dessert
  8. Fruits like berries for decoration

Method

  1. Preheat oven at 180 deg C.
  2. Using either microwave or water bath method, melt the butter and chocolate together. Be sure not to do it directly on the stove as it will burn the mixture.
  3. Turn off the heat and move bowl out of the water bath to cool slightly.
  4. Using an electric whisk or a mixer, beat the eggs and sugar until light yellow and frothy.
  5. Pour the chocolate mixture into the egg mixture and stir in the flour.
  6. Butter your ramekins lightly.
  7. Fill the ramekins 3/4 full with the final mixture.
  8. Bake for 10 mins.
  9. If you find it overcooked or undercooked, you can adjust the timing. But either way, you will be able to eat the cake, just whether the lava will flow.
  10. Once its done, remove and let it cool for 10 mins, before using a knife to loose the edges and turn the ramekin over slowly to remove the cake.
  11. Sieve icing sugar over the cake and serve with ice cream.
